Summary: The Doctor isn’t happy with his new appearance.

He had grey in his hair. Grey! After getting increasingly younger bodies for the past several regenerations, he was suddenly beginning to look old!
Alright, so before this regeneration he already looked old, but that was because his body WAS old. He’d had that body longer than any of his previous ones, and it had aged accordingly with the passing years. This one, however, was new; it should look young! He should feel rejuvenated, not like a crotchety old man.
Clara said the salt-and-pepper look was distinguished, that it suited him, but what did she know? She wasn’t going grey!

On a serious note: The events that lead to Eleven's regeneration was why Twelve "looked" older than his previous incarnations.

I could say: Where did I go wrong in my life? Why did I waste my twenties? Sure, physical health can slow anyone down at times. But I'm more grateful when I'm feeling moderately well.
Some people can be fit as a fiddle, but dumb as a doornail. I'm kind of generalising here. All I can say is do what makes you happy to the best of your ability.
I try to learn new things wherever possible. People who have hardships or challenges in life, can be great inspirations for others who maybe feeling stagnant.
